There are two basic types: flat-leaf parsley and curly-leaf parsley. Both are a rich source of vitamins and minerals. The medicinal parts of parsley are its root, leaves, and seeds. Parsley is a rich source of vitamin C and B-complex vitamins, carotenoids, potassium minerals (good for heart function), sulfur salts, calcium, iron, fluorine, iodine, manganese, and copper. Its leaves contain chlorophyll, as well as the flavone apigenin, which has anti-bacterial, anti-inflammatory, and anti-oxidative properties. It is excellent for digestion: it decreases bloating, eliminates flatulence, and reduces intestinal cramping and fermentation. Promotes the secretion of urine and accumulated water from the body. Improves blood circulation and is useful in all diets and programmes aimed at reducing cellulite, losing weight, and fighting rheumatism, gout, and eczema. Helps against respiratory tract problems – parsley tea is recommended for treating coughs and colds, as well as asthma. Reduce the discomfort of insect bites by rubbing the sting with parsley leaves. Parsley extract is used in skin lightening creams – to even out skin tone, lighten sun spots, reduce redness, and make the skin appear more youthful.
